How do you secure this strip around the brewing jar?

I use a rubber band to secure mine. Velcro strips or gaffer's tape would also work. If you're using this to brew kombucha or a comparable drink, whatever you do, don't set the jar on the heating pad, which is what another user recommended. That's the last thing you'd want to do. Doing this offsets yeast growth and will ruin batches. The variance in temperature throughout the container will also be greater.

Not a good choice as a heating mat for cats, because it will heat to 2 degrees above the cats body temperature. I know this because my own old kitty, got on this mat when I was moving my dragonfruit babies from the mat to pot them up, said cat laid on it for the heat. I let her do it for quite a while, even tho I knew it would get too hot for her. She was on and off it, but it really would just get too hot. So I finally broke down and bought a pet mat and wrapped a couple shirts around it. That mat was a pet, K&H 15.75x25.5 and sold on Amazon for 36$. My old cat can lay on it all day without burning up. This plant product wasn't intended for that much heat, it did ok, but works better for the purpose it was designed for. Hope this helps, but I wouldn't do it myself, if only temporary until you could get a better "for pets" heated waterproof mat.

How long can it be plugged in for?

Mine stays plugged in literally 24/7. I use it to start pepper seedings in January so I can't shut it off. I have had no issues with the surface underneath it overheating.

I have a 1 gallon glass jar for brewing kombucha in. Does the size of the mat make a difference? If so, which size is best - 3" x 20" or 10" x 20"?

10 by 20 is the best surface coverage. wrap it around the jug, not jug on top

Tut seit 14 Tagen was es soll

.. was eigentlich nicht verwundert. Schlechte Rezensionen schreckten mich zwar ab, aber die gab es bei JEDER Heizmatte. Wichtig ist - meiner Meinung nach -, dass die Matte nicht zu sehr beansprucht wird, also nicht knicken, zu sehr biegen, was heißes draufstellen .. oder was weiß ich. Wir haben ein altes Kuchenblech draufgestellt: das verteilt die Wärme gut, schützt zusätzlich vor zuviel Wasser und hat kein Problem mit Kratzern, Schlägen, usw. Die Heizmatte zum Vorziehen von Tomaten oder Chilis bringt seine Temperatur gut hin. Nach 14 Tagen sehe ich natürlich noch keine Ergebnisse .. abwarten!
