I usually get the miso paste from the refrigerated section of one of our local Asian grocery stores, never had one that's not refrigerated before. I did it see at Trader Joe's, but theirs is not organic, which means GMO, I didn't get it. This, is organic, by the Japanese standard, I think, since it doesn't have the USDA Organic logo on it.I like that it's a squeezable bag and you can squeeze out however much you want and close it back up and then refrigerate the bag. I made 600ml of the dashi stock first, and then I added wakame seaweed to it to let it bloom and expand. At the same time, I spooned like 2 Tbsp of this miso paste into a small bowl, scooped up a few tablespoons of the dashi broth into the bowl and mix the miso paste into the dashi broth. When it's all mixed up, I poured it back into my pot, mix everything up, I got myself a pot of miso soup. I didn't have tofu, I made noodles instead and added soba noodles to my miso broth with seaweed. Mmmmmm! So comforting, so good!

A very nice miso that makes a great base or soup. Not over powering, light and delicious.

I don’t know if the batch I got was old or what, but it’s quite dark for white Miso.

The lid was loose and the product was not sealed so it was dried out on top. I'm afraid to use it. And now I find out I can't return it either. Bummer! I lost on this one. 🫤

Trader Joe’s is always out of stock on white miso paste. This one is very good (a bit sweeter), but costs much less. Only gave it 4 stars because I would prefer a little less sweet.
