Are the non-metal parts (the gray plate & silverware holders) dishwasher safe, in case they get moldy/dirty? What material are they made of?

Looks just like plastic. I use vinegar in a spray bottle and clean off the white scale/lime

Is the water spout a separate attachment to the mat or does the mat have a cut out with the spout design?

The water spout is separate from the base water catch. It snaps on or off four lugs. You can also rotate the water spout ninety degrees in either direction using the four lugs. You can also remove the water spout for cleaning.

Does the aluminum easily scratch?

I only have had it a little over 30 days. It has not been scratched to date. Dish rack appears fairly robust for aluminum. Hope this helps
