Not suitable for American recipes
Glorified plain flour. You’ll get the same result with Homepride which has roughly the same protein content (around 9%). This is not suitable for American recipes that call for cake flour. Certainly will not work for chiffon or angel food cakes. I’ve found that in American white cakes, the texture is very dense and gummy. The texture was somewhere between cake and bread. It also affected the colour so the cakes were no longer “white.” The cake had no crumbs at all. I made the same cakes with Swans Down (2% protein), using the same recipes with the same methods, but the difference was like chalk and cheese.I’m sure it will be fabulous in other recipes that call for plain/all-purpose flour like biscuits, carrot cakes, lemon cakes and chocolate cakes. But that’s not what I bought it for. I would do a side by side to show the results but I’ve had to bin the cakes and turned the other into a zombie cake to practice decorating. I had hoped that I could stop spending an arm and a leg on American cake flour. But unfortunately not.Update: I've found it improves with recipes using reverse creaming method and developed with AP flour. This is now my go-to brand for plain flour used in cakes as it is organic and a quality product. I just wouldn't call it true cake flour (as found in the States).

Nicely packaged
Delivered on time. Thank you. I’ve not used it yet though. A lot of American recipes online call for Cake Flour which is low in protein and is very hard to find in supermarkets here in the UK.I read online from a professional baker in America that this particular brand of flour Shipton Mill is almost the same as American Cake flour for recipes which use the reverse creaming method for a moist, soft and tender cake so I’m giving it a try. It is a bit pricey but I’m hoping it’s worth the cost. I’ll update my review when I have used it. Hopefully I can then give it 5*
