A FANTASTIC BREAD PROOFER YOGURT & FERMENT [E.G. NATTO] MAKER
The Brod & Taylor Folding Proofer and Slow Cooker will not only enable you to proof yeast and sourdough bread dough’s, slow cook one-pot meals, temper chocolate, make yogurt, and also enable you to make a diverse variety of probiotic ferments, one of which is natto. The Brod & Taylor site is worth the visit to get diverse recipes. I would give the Brod & Taylor Folding Proofer and Slow Cooker ten stars if possible; it is in constant use here. We use it for making yogurt and proofing a diversity of whole-grain breads and rolls [mostly rye, spelt, amaranth mixes]. Most especially we use the Brod & Taylor Proofer to make a fermented probiotic food, natto beans, [this ferment produces nattokinase]. We agree with many who notice that when you include natto in your diet you feel great, have sharper thinking, and benefit from its medicinal properties. The Proofer temperature range is: 70–195F / 21–90C and we personally have found that the Brod & Taylor Proofer works best for natto when you set the temperature at 94-95 degrees. This can vary a bit from machine to machine and your elevation also will affect the temperature setting. Regarding the timer, we are happy to report that this proofer can hold the temperature exactly for the required 24 hours needed to ferment the cooked natto beans. We are so pleased that we are going to get the Brod & Taylor Folding Dehydrator next and take a percentage of our own freshly made natto beans and make our own dehydrated natto for ourselves and to share with others. By the way, natto beans can be made from any kind of beans we have successfully used mung, butter beans, lima beans, and organic soybeans. YouTube has many great sources with instructions for making natto. To get best results from the Proofer when making natto we recommend nothing less than 48 hours to pre-soak beans before cooking, never boil the beans just simmer for perfect beans that then, at that point, you are ready to be put in the proofer to ferment after inoculating with a bit of nattokinase. If you are serious about making yogurt, proofing bread or fermenting natto beans this proofer will make the job much easier and take out a lot of the frustration.
