Q: Do you think two of these could squeeze into a drawer 16 " wide?

Hhmm, that would be very tight. I pushed mine together as tight as I could and they measured 1/32" over 16 inches. A palm sander could probably take them down enough to get them in.

Q: What empty spice jars can fit this rack? Can the flat sided, RSVP spice jars fit?

We fit four of the Spice Island round jars (1-3/4" in diameter and 4-3/8" in height) perfectly per row. The inside width of each row is 7-3/8" and the depth of each row is 1-3/4" and the height of each row is 4-1/2" I do not use the RSVP spice jars, so I can't answer how they fit.

Q: I want to use this to organize canned veggies and fruits and the like - are the shelves wide enough for 3" cans?

Looks like the bottom one is about 2 5/8" to maybe 2 3/4" deep...hard to tell from the angle I was looking, but not more than 2 3/4"
