How many do i need to go around a 3 burner stove?

Measure around three sides of your stove. Divide that number by 3.3" which is the width of each plate of a windscreen to determine the total number of windscreen plates you need. Add about 4 to that number to allow some space between the stove and the screen. Now you know the number of plates you need, your can buy enough of windscreens and the size. The come with 10 plates or 12 plates, etc.

What magnets are people using to hold this down in higher winds?

Can you spray with heat resistant paint to prevnt rust?

I dont see why not. As long is its heat resistant paint.
