If you don't like Al'dente pasta, do not buy
I've struggled for years on Keto to find a suitable replacement for pasta that didn't take forever to prepare. I happened upon this brand recently and gave it a try. It is as close to traditional pasta I think you can get without it actually being pasta lol. It has a slight wheat pasta texture but not the flavor. Has little to no flavor which is a huge bonus for me. Like the box says however, this is NOT regular pasta and will not get as soft as normal pasta can with boiling. This pasta comes out al 'dente, still a tiny bit firm or chewy. That is the only "con" I have for this brand. But as someone that enjoys al 'dente normally, I found this pasta delicious and perfect for my low sugar pasta sauces I use. It's a little expensive, but that's the convenience of it. :)

Just don't.
I had really, REALLY high hopes for these. They don't taste bad—they don't taste much like anything, but they never get to a 'soft' consistency ever. Boiled for 15 minutes... still like eating a stick. Can't twist them on the fork because they aren't pliable enough. They're chewy... just no. If they got soft enough to actually eat without having to cut them up and eat with a spoon, they'd be better, but still way overpriced. I paid $36 for 1.5 pounds of noodles. What the hell?? My fault, I know—clearly says 8 oz box, and it's my fault for not noticing, but seriously? $36. Nope, just not worth it. I just wish I could return them.

Product has potential to be a 5 star
I ordered this product based on the research I've read. So I opted for the spaghetti variety pack (2 zero carb/1 low carb) to see the difference in texture, taste ect for both styles. When the product arrived it was only the zero carb product (3 packs). I was a little disappointed to find it wouldn't be able to try the low carb but it is what it is. Mistakes happen so we move on. The only gripe I have is that the directions to cook the product states it takes 6-10 minutes to cook. 6 being al dente. I had to cook it for 25 plus minutes to reach an appropriate al dente. Yes, unfortunately 25 minutes and in my opinion it could've gone a little longer but I didn't want to wait longer. At the very end the pasta is possibly the best low carb pasta out there in the market. I'll definitely be purchasing again moving forward but I guess it'll be the low carb since the mispick happened with my last order. Overall very solid product with great potential. 👍🏼

Been eating low carb for over 20 years. These were great!
I was super excited to see a pasta that was zero carb but after reading the reviews hesitant to order it. It arrived today and I immediately wanted to try it. I took the tip of putting a tablespoon of baking soda in the water and boiled the noodles for 10 mins with Italian seasoning, olive oil, and garlic powder. The noodles weren’t any harder than any other low carb noodle I’ve had and tasted better than I was expecting. I will definitely be ordering again and going to try the next batch without baking soda, not so sure I needed it. Excellent low carb noodles!

It's like somebody tried to make home made pasta and failed
It's not chewy, but rather unfinished or simply has a bad texture.while I was cooking it I thought it might be similar to Soba, it had that feel on chopsticks, but no it's not, but it has a similar texture to failed homemade soba noodles (scratch from Sobako). if you are not familiar with those, bad pea pasta is probably the closest one.I prefer palm of hears over this for low carb option, or would just eat regular noodles on the carb cycle as I am not on strict Keto.I like the idea of low-carb and high-protein noodles and their effort to make it but not worth the price in my opinion.I also think this might be better for something like Yakisoba or just eat as soba alt, I might make Aglio e Olio but did not taste good with tomato.I'll give other products a try but will not buy this one again.

Updated: Instructions are worthless, read reviews for improvement
Initially this was a one-star review because cooking these to the package directions leaves you a crunchy, uncooked noodle that is utterly inedible.After posting, I read more reviews of other keto noodles and found out that the instructions on this package are complete garbage, but there IS a way to cook them correctly. Adding a couple tablespoons of baking soda and lemon juice will cause a chemical reaction in the water and get you a much more normal noodle consistency. You MUST rinse the noodles as part of straining the water off before adding them to a dish though, due to flavor and texture changes from the baking soda.Overall, the instructions on these noodles are complete and utter trash, and the vendor is woefully inept for not updating them to better ones. That said, the noodles when cooked correctly, using the above process, actually come out very much like real spaghetti in flavor and consistency. Knowing what I know now, I will buy again.

Honest Review
As a Type 2 Diabetic I was looking forward to eating pasta again. I really wanted to like this pasta! Unfortunately it is not very good. I realize it’s not going to be exactly like normal pasta - but this is nothing like pasta at all. It is tough & grainy, the flavor taste like dust, and it doesn’t hold sauce at all.I had read that cooking times needed to be at least doubled - so I cooked it for 18 minutes. Even doubling the cook time results is spaghetti that is still very stiff. Not like al dente stiff - think more like a bundle of zip ties stiff. It won’t twirl around your fork at all. It bends, but it won’t twirl.The texture is very grainy. It’s closer to dry oatmeal in texture than pasta. It doesn’t chew right.The taste is odd. Odd enough that it pushes through the flavor of a green pepper & mushroom sauce. And for what ever reason sauce does not stick to this pasta. You have to try to scrap sauce up with the fork while you’re eating it to get any sauce.And finally - I found this very odd as well - it did not hold heat. I’m a fast eater, and this stuff got cold very quickly.I do NOT recommend! I’m going to ask Amazon for a refund - if they refuse I’ll trash it. I’d rather not eat pasta than eat this garbage ever again!
