Does the internal handle have a screwhole to affix to the spindle?

The spindle is fixed to the right hand handle in the picture. The left hand handle ( that goes on the rim lock) has a grub screw to secure it to the spindle.

How do you attach the ring to the door with the knob in the way of the screwdriver?

with a long thin screwdriver which has a head matched to the screw. It is a bit of the fiddle, but mark and drill the holes first without the ring and screw in the screws nearly all the way, before putting the ring in place and screwing down. A blob of wax on the tip of the screw helps it go in smoothly

The knob has came detached from the plate that you screw to the door. Can this be fixed? Should i return?

I don't know if that is fixable, but I would return it anyway, in case you try and fix it and mess it up.
