Kodiak Classic Flapjack & Waffle Mix, Plant Based, Protein Packed, 18 Ounces (Pack Of 6)

I really like the Kodiak Classic flavored "Flapjack and Waffle Mix."It's difficult to find a pancake mix that is both plant-based and whole-foods, without chemical additives and with great, simple flavor without gimmicks like chocolate chips or "birthday cake power cakes."Rather than adding candy, I add fresh berries, sliced & toasted almonds, and pieces of fresh banana to the blended pancake mix before cooking.Also add wonderful spices, such as cinnamon, cloves, and nutmeg to the batter.About a year or so ago, I noticed it was becoming more difficult to find the "Classic" flavor in stores, both grocery stores and "health food" stores and foodie stores. And I see there is only one box left on this Amazon website (as of today's review).Those stores (everything from Kroger to Sprouts and Whole Foods) didn't discontinue all Kodiak brand products, and I could get the crazy flavors, but not this basic, simple one that tastes great, even unadorned or with natural products that I add (see above).I can still buy the "Classic" flavored mix on the Kodiak website, but guess what?If I purchase a $7.65 box of Classic flavor, I have to pay $10.00 for shipping!!! That's $17.65 for a box of pancake mix!!!I'm a single lady who doesn't eat pancakes every day, and a box normally lasts a few months, if I refrigerate it. Stocking up to save shipping costs is not an option.BTW, if I purchase it on the Kodiak website, I'm asked to check a box that says, "I agree to receive automated marketing messages, frequency may vary, at the phone number/email provided. " Although it adds, "Consent is not a condition to purchase. "I'm glad I could find it on Amazon. And that I'm a Prime member.At least I can find it here...for now.

This is one of the few plant-based pancake mixes that doesn’t suggest adding eggs and or milk to make it better. It is not gummy when cooked. It holds up to the addition of berries or chips.

Love that there is a plant-based version but very challenging to achieve the fluffiness one would expect from pancakes. These often turn out quite dense, meaning you have to add other products to get a fluffier pancake out of the mix.

I like this item because, it is Vegan. Very fluffy Nd light.
