Will this work for making kombucha or tea

No, it seriously doesn’t taste like actual ginger. It tastes more like corn syrup with a breath of pickled ginger from a sushi restaurant. I make kombucha and herbal teas as well, but I threw this away right after opening it. You’re better off grinding actual ginger root yourself or infusing slices of it.

Why is this $3.44 at Walmart and $11.99 here?

Walmart’s is a much smaller size.

If a recipe calls for 4tbs of fresh, how much of this do I use?

You don't. This is a condiment. It is NOT raw ginger. It's much sweeter than raw ginger. If you use it, it will change the recipe flavor.

Can this be used in drinks or is it more for cooking and sauces?

IMO it’s for cooking and sauces.
