Anupy Singla makes Indian food approachable. Her recipes - vegan, vegetarian, meat - have all turned out delicious and even better than most restaurants. Her chicken curry, chana dal, and palak paneer are hits even with my extremely picky Korean family. My friends know I love Indian food so they've gifted me cookbooks by other authors, but I always come back to Anupy Singla. Get this. You won't regret it.

Easy to follow directions and DELICIOUS recipes
Anupy is credited with teaching me how to cook Indian food. I have been following her on FB for years and have ALL of her cookbooks. Love this new Instant Pot Indian cookbook. In the cookbook she created recipes for 3, 6 and 8Qt Instant Pots! I have a 3Q so this is perfect as most cookbooks are for 6Q. Love the pictures and explanations of spices and legumes as I'm learning. Then she explains HOW to USE the Instant Pot. Different levels, release times/methods, when to use the trivet ... making the buttered chicken so you don't get the burn warning. Using the Instant Pot is so quick and this cookbook encourages me to try and cook more! The above pictures are the Buttered Chicken, Chana Masala and Sookhi Dal (thought I made w/ split chickpeas vs split lentils). Definitely recommend getting this cookbook to expand your cooking.

I originally enjoyed your slow cooker and then your vegan cookbooks… so had been eagerly awaiting your instant pot entry.I had no idea how timely it would be, and so wanted to thank you for it.I’m a long term devotee of the local Vedanta Center / Ramakrishna Mission, just this week I was blessed with the opportunity to cook for the center daily for the week.I usually cook for 4 people but now needed to regularly feed about 12.Your instant pot instructions for the 8 quart are impeccable and have made rising to this challenge a breeze!Additionally, I semi-regularly cook in bulk for about 100 for a local homeless shelter…. Your scaled up recipes are perfect!Thank you so much. The format is very useful.And the recipes are turning out great!With appreciation.

I already made my favorite palak paneer, and it was so fast and so delicious. I am soaking some urad and kidney beans for my husband's favorite dal makhani for tomorrow! This book is a game changer.

Incredible Cookbook
We received Anupy Singla’s Instant Pot Indian as an anniversary gift. The book gives great information about using the Instant Pot. We’ve had it for years and learned new tips! The recipes are detailed and easy to use. First, we made the Moong Dal Chilkha Kitchari. A comforting split green dal and rice porridge. No photos of the dish because we were too eager to eat it.

Very easy to follow
Because this book is so easy to follow, I have started using my instant pot. Before it was sitting collecting dust. Everything I have made has come out very tasty. Very happy with this book.
