Will they freeze and crack

All of them will crack given years of use... but shouldn't give you problems for a long time! I have a pool business and I use them often for customers.

Are these adjustable to make less of a waterfall?

Hello, No, these are not adjustable. It is a fixed, spring-loaded check-valve.

My spa drains down half way after the pump stops bc the spa is above the pool. A pool guy came out and said this pt would correct the issue. Will it?

It helps, but these are crummy little check valves that quickly determinate so they don't close tightly even though they're almost new and are not cheap. Someone needs to invent a better design. But until then I don't what else to do but replace it. Perhaps it will help your issue for awhile. 
