Do these gloves offer protection from needle sticks?

Not positive if the gloves protect from needle sticks, but the are one of the best pair of gloves I've come across. The palm is leather so I would assume it offers some protection against needles. Thinnest, strongest gloves I've owned.

Which way do these gloves stretch best? i'm xl by finger length, but l by palm size. do i order up or down?

Order according to finger length, the palm is goat leather and will not stretch.

How do they fit? If i normally wear a large will it be whats expected?

I ordered a large because that's what I normally wear . I could barely fit my hands in, but decided to keep them anyway. Reason being is that after stretching them doing a few chores around the house , they actually fit like a glove to the point that you can do everything especially if your shooting with them . I like them tight like my actual hands .
