Does this work on a Shimano Sora

As far as I know Shimano use the same fittings for all there stuff

will these fit my shimano gear shifters on my mountain bike. i.e. are the ends the same for road and mtb ? thank you in advance.

These will fit mountain bikes, cable including thickness is exactly the same. The only difference between this kit and the mountain bike kit is the total length, same with the outer housing.

Can this set be used universally on MTB, road and hybrid?

Yes it can. It is standard size cable that is long enough for front or back and will suit all bikes. I use these for my mtb and road bike
