I got my pie plate for Christmas, as a gift from my husband. Very excited, till i had to clean it after making a pie, and to my shock, it is so hard?

I only found over dribbles on the outer side a bit hard to clean but leaving it soak in warm for a short while makes it easy. Be careful to keep the bottom crust intact to minimize leakage underneath, and don't over fill and crimp top to bottom to minimize leakage. Water will loosen all baked on food if you let it soak. Good luck!

When making a 2 crust pot pie, is it necessary to grease and flour pan or use a nonstick spray beforehand?

I've never greased and floured pies. Only cake. I've only used a few times but no problems with sticking. Made apple and pumpkin no issues.
