Worth every single penny!
I'm surprised by some of the negative reviews I've seen for this book because I'm very happy with it. It is true that there is no in-depth photographic spread of caramel making basics, but that is easy enough to find online and, once you've mastered them, this book will become an infatuation!I've tried a number of recipes in here and have been happy with them all. The Salted Caramel Buttercream recipe dropped jaws and I made another variation of it by dropping the salt and dusting the cupcakes with the Praline recipe, which is also in this book. The Chocolate Dulce de Leche Pecan Pie will solve all family strife over the holiday table and the Caramel Ice Cream is instant euphoria. Really, this is a great, great book. Caramel really isn't that hard to make it just takes a bit of practice and the reward is baking from this book!

This book is a winner.
You need this book if you are a fan of caramel. It is very well written. The recipes are easy to understand. I made the caramel ice cream recipe. My husband said that it was the best ice cream he had ever had.

Great value enjoyable book.
Classic and adventurous for the inexperienced. Tips and techniques make this interesting and useful. There are terrific photos in the book and they are enticing. I feel I am developing a new dessert repertoire...

Gorgeous! Good ideas but basic sauce recipe is off off off
The recipes are interesting with appealing photos. It would make a really nice gift book. Unfortunately, the first thing I made was the caramel sauce which looked NOTHING like the associated photo. The proportions in this are completely off. Half a cup of sugar with over a cup of liquid (3/4 heavy cream, 2 Tbsp. water, and 4 Tbsp. butter) makes a runny unappealing mess. It took an additional 1 1/2 cups of sugar and more cooking to fix this mess. If this sauce, which is pretty basic, turns out this way, not sure I can trust other recipes in the book. There are still good ideas despite this.

Great content that produces delicious results!!!
Great techniques, tips, and equipment recommendations. Every recipe I've made from this book so far has received rave reviews (and I own an ice cream parlor with super premium ice creams that use various caramels so my testers know quality when they taste it). Excellent book. I'm making the caramelized white chocolate today and can't wait to taste it! Very convenient on kindle reader on smartphone. I have a complete library of cookbooks at my fingertips.

It just arrived and I am already in love...
and cannot wait to start playing with sugar and butter and cream. The recipes are engaging, every page offers another temptation to start this sugary journey with.Even if I never cook any caramel, the pictures alone are as satisfying as anything a recipe can promise. Even the props make me nostalgic. Great book.

delicious looking recipes
I loved the recipe book. It would have been better had more photo's been added, one for each recipe, but overall a well written book. One complaint I have is the addition of corn syrup to the recipes. I know it can be made without and considering that corn is the one of most GM crops and one of the worst offenders in health issues, it would be better to stick to less processed ingredients. The majority of health issues have risen from the industrialisation of food. If we are to indulge, can we not do it in as clean a way as possible... Using, when possible, organic, less refined ingredients.Eggs that are free-range and antibiotic free are much healthy and tastier than those coming from an industrial chicken farm. How about also recommending support of local, small farmers and local flour mills when procuring ingredients. Attending Farmers Markets for often fresher ingredients should have been addressed in the book. These would make the recipes that much more exceptional, knowing the ingredients are truly of high quality, and helping to provide local jobs.Additionally, the recommendation of aluminium was not forethought. Aluminium has been linked to Alzheimer's. We should be promoting healthier choices in our bakeware too. Glass, Stainless steel, cast iron, natural stoneware are some proven safe materials in dish ware. However, I am keen to try the majority of the recipes.

Where's the cover recipe?
I bought the book solely for the recipe on the cover and I can't locate it in the book. Other than that, I've yet to make anything from it.
