Q: Are the scraper blades in the pasta sheeter made from plastic or stainless steel?

They're definitely not plastic. I'm relatively sure they're stainless.

Q: It says can not immerse in water, can someone tell mw why?

The mechanical part is sensitive to water and submerging the device can have long term consequences. Especially because the housing is not equipped to drain excess fluid. Not to offend: if you need to submerge to clean, you either don't know how to clean, or, you need a new device.

Not sure exactly what you’re asking, but I’m going to take a stab at answering. I think you’re problem is the pasta maker roller isn’t rolling. If that’s the issue, when you first put your pasta maker into the hub on the front of your Kitchen Aid and tighten the screw to hold it in place, once you turn on the mixer, the shaft on the pasta maker doesn’t roll until you put dough into it. Once the dough is in place, the roller on the pasta maker. The confusing thing to me was that the mixer still runs as if you were making a cake and using the mixer portion. Hope this helped, but if not rewrite your question and I’ll try to help.
