The largest of the cultivated mushrooms, Portabello, is actually a mature Crimini. Commonly used as a meat substitute, its hearty texture results from the longer growing period. Saute with soy sauce and place over salad greens. Try replacing meat in stews and soups or adding Portabello to meat for extra texture. Stir fry with broccoli and beef strips.
