Fantastic Frying Pan
This frying pan is fantastic for searing foods. I used it for steaks and it cooked evenly and heated quickly. Downside is that I had to cook each steak by itself since the bottom surface is 7.5". Also, use caution simply because it does heat up fast so no pre-warming necessary. My favorite thing and the reason I got this frying pan is because it can go from the stove to the oven. I have 6 frying pans but none that can do the stove to oven thing which is so helpful. I was impressed that the handle didn't heat up when I was cooking stovetop. I assumed that since it was completely stainless steel it would and was pleasantly surprised when it didn't - big plus. So, as of right now - my only complaint is that I wish the bottom surface was 10" - I have a couple of 10" pans and one has a 8.5" bottom surface and this one is measured 10.5" from side to side at the top rim of the pan. Oh, and another negative would be the price - even though this is a fantastic pan it's quite expensive.Measurements: bottom surface 7.5", the rim to rim surface is 10.5", the depth of the pan is 1 3/4" and the handle is 7.5" long.

Still love Emeril's products
I bought a cookware set made by Emeril about 10 years ago and have loved it. So, when I decided I was tired of spending money every 3-4 months on ceramic-coated small skillets, I looked to Emeril. The 8" fry pan is the perfect size for quick, small meals, which I do alot.It's got great heat distribution and the finish is super easy to clean. I don't put my cookware in the dishwasher because I have hard water. But the clean up is so easy, the extra step to hand dry is a no brainer. Plus, it's kept my cookware looking and performing great for 13 years.Emeril's cookware should be considered an investment that will save you time, frustration and scorched meals for years to come. The fact it's made of stainless steel also saves you exposure to toxins leeching into your meals.Thanks Emeril!

Good skillet so far.
So, some people wrote that the skillet tilts over b/c of the handle, this is false. As you can see on the photo, it is standing firmly flat. It heats up very well. Recommendation from the manufacturer is to use low to medium heat for cooking. I just got it, and still getting used to it. It does burn a bit, but so far cleaned up really well with steel wool soap pad. I will update my review on how well the eggs, meat and potatoes cook. So far, I made french toast should have used lower setting. The skillet heats up really well.

I had the old one where you could see the layers, you cannot on this one
On the old one you could see all the layers. On this one they are all encapsulated.The old one lasted for at least 10 years until I accidentally left it on the stove with heat and empty.This one is much lighter and I cant be sure the layers are there. It stainless so it does not stick and you don't have to worry about scratching teflon or getting teflon in your food.

Very pleased
Bought this to replace my 25 year old RevereWare skillet that got lost in a move. (How does that happen?) I fried and scrambled some eggs in it today. I let it cool completely before scrubbing and the eggs came right out with a little detergent, water and a nylon scrubby sponge. The handle stayed cool when I cooked and the eggs didn’t stick with just a small pat of butter. Reasonably priced too. Only drawback is you cannot put the pan under the broiler, so I will have to use a cast iron skillet for that. Very pleased.

A great pan! Kinda sticks a bit
If you cook healty low fat food, This may not be a homerun.It's a great pan. But it's not something you want to cook your eggs with unless you use a lot of butter or oil.It's great for cooking chilli at low heat though! :)

Love it but clean or soak right after use
Love the weight of this and it looks great. It’s not as easy to clean and it’s a stretch to call this “non stick”. Recommend you wash right away or soak overnight in water to loosen stuck on food. I keep an SOS pad handy which works well too.Other than that I love it! I bought 3 sizes of fry pans, two saucepans and a large sauté pan!!

A great addition to our existing Emeril cookware
We got the 3 quart sauce pan, which is actually shorter and wider than what I would consider a typical 3 qt sauce pan. That's good and bad. The good is that it provides a larger bottom surface area, so it heats more quickly and evenly across your food. The bad is that it can't share lids with our 1 qt pan/steamer/etc that are all the smaller diameter. It's not a deal killer, but beware of the diameter of this 3 qt sauce pan.Other than that (and I'm not taking away a star), it's great. It looks, feels, cooks, and cleans just like the rest of our Emeril cookware, which we've been using for a looong time now. Highly recommended.
