I was going to get this to use in a bus conversion to vent my battery box can this be made to run off 12v rather 120v ?

You could get a DC-DC step down converter to take the 12v in and output match the voltage of the power supply. They usually go for 10-12 bucks. Looks like the input power is 7v @2a based on the label in the image.

Can there be multiple thermostat probes to control different fans in different cabinets? my cabinet has two different areas to store av equipment.

yes but you would need to buy a second controller as fans daisy chain to each other then the controller

Could the fans be mounted in different walls? My closet forms part of a external corner, would like the intake in one wall, the exhaust in the other.
