I'm 56 years old and never have shot a bow would this be a good beginner bow and what draw weight should I start with ?

Absolutely a good beginner bow and unless you have higher level uses and specific needs for a better recurve this should carry you through intermediate to be honest. Draw weight will have a bunch of variables, what you intend to do with it, how strong you are, how strong you expect to reasonably get on a bow etc. Id say 25-30# is more than enough for most non higher level needs. Hunting is a different story but you'll need to build strength and accuracy if thats the end goal anyway and 25-30# limbs is probably the best way to do that. Cheers!

Is the more expensive + arrow + protection care purchase option the "full kit" in the pictures and what's included?

No. You get what you see a good take down bow. Arrows do not come with the bow. My suggestion is that you buy Easton XX75 arrows far what poundage the bow is.

Depends on how hard you can pull on it mate ;) but without breaking something its pretty much dead on 29" max. Unless something has gone horribly wrong, you should find a sweet spot with this bow before you hit that max.
