Can I power three transmitters from 1 12 V power supply.? Do you sell an adapter cable to daisychain three together?

No, these can't be daisy chained together. We do have 1x4 extender that you can use instead: https://amazon.com/Extender-Splitter-Orei-Multiple-Single/dp/B08KGWXJSG

can a splitter be used to project from one laptop to 2 projectors with these converters?

Simply NO with this extender only. If you purchase an HDMI splitter it will work as long as the splitter is HDCP 2.2 enabled. I would recommend a 1x2 Matrix Extender. It's more of what you are looking for.
