The best bread ever
As someone who is recently gluten free finding things that are delicious and fill a craving is rare but this bread did it! It’s delicious, easy to make and has the best texture. Best gluten free option I’ve found for sure!

The AIP diet is rough, and it’s so nice to have this little treat. Not hard to make and tastes great.

Hard to tell when it’s done
It tastes good. I’d buy it again, but it is hard to tell when it’s done. 25 minutes was not enough time for MY oven and the center was mushy. Couldn’t tell by jiggling, touch, or toothpick. Next time I might try a thermometer….?

These are great! I’ve used applesauce with banana when I didn’t have enough bananas to get the right moisture content. Pricing is expected due to the quality of ingredients. Clean food is expensive. You would spend significantly more buying all the ingredients separately and I appreciate the convenience of having one package to pack with me on out-of-town trips. I make muffins instead of a bread loaf, for quicker bake times. 375* degrees for around 16-18 min. I’ve used a muffin pan and also just a 1/4 cup scoop on a cookie sheet. I sprinkle with cinnamon when done. Could also add coconut sugar as a topping if you prefer more sweetness. Even though it only lists almond and peanut free, I received the following message from the company regarding all nuts:Hi Amber, thanks so much for reaching out! We are fully nut free and are produced on nut-free lines…except for COCONUT. We don’t say free of all nuts simply because of the coconut that is in some of our products. Nope!
I’ve tried many allergy conscious breads and mixes and this was not only the worst one I tried, it was also the most expensive. It had a bitter taste to it, a slightly chewy consistency and the flavors were more in line with molasses than pumpkin. I think the Simple Mills Banana bread is a much better option. Still expensive but more than half the cost of this brand.

Batter too thick, result too dry
I am doing the autoimmune protocol diet and slowly adding back a few things. I really miss having a sort of baked good for breakfast so I have tried quite a few mixes and recipes. I didn't have a good result with this one. Followed directions and ended up with a batter so thick it was like clay and couldn't actually be poured or turned into the pan. Just way too thick. I've made breads before and never had a bread batter/dough come out this thick and heavy. I ended up adding a little coconut milk to get a decent consistency. Once baked, the end result was dense and heavy and dry. The flavor is okay, I can't fault it for that. I did end up eating about half the loaf before giving up on it. I froze slices and then microwaved them as needed for breakfast during the week, topped with a little ghee. That made for a decent little breakfast treat but I ultimately didn't feel like the loaf was worth finishing. Something that dense and heavy just can't be good for you, even without the flours and sugars I'm trying to avoid. The search goes on.
