Um...you can replace anything you want. Nit sure what thermocoupler you are referring to, but there is nothing to keep you from running a different tower, like a redux.

What percentage of alcohol can this produce?

Of course that depends on the alcohol content going in, but i once produced 1 gallon of 135 Proof.
