The cake is moist, flavorful, tender crumb, looked beautiful with cream cheese frosting, and best of all, DELICIOUS!!! I took it to a potluck tonight, and was told by one man it was the best cake he had ever eaten, and he had had 2 pieces!!! It will be a staple in my pantry.

I have been gluten free for about 15 years. My body does not do well on gluten especially wheat so when I found this gluten free carrot cake at the grocery store I bought one to try. It's really an excellent moist, flavorful cake. Of course then my grocery store didn't have it anymore. That's when I found it on Amazon (my favorite store). The only thing is they are $15 for one. So kinda pricey. They are alot cheaper ($8 ea) if you buy 6 for $48. That's what I did. The dry mixes store well and have a fairly long shelf life at about 18 months for the ones I bought. You could likely freeze them too though I have not tried that. I add cream cheese frosting to mine and a flower for color and it makes a beautiful and excellent tasting cake for any occasion. Try it! You'll love it!!

This GF carrot cake was delicious. I baked it in a 9x13 pan so I dont know if it would have made a nice double layer cake. I added 1/2 cup of pineapple when I made it and I frosted it with cream cheese frosting. This was one of the best carrot cakes I have ever eaten. It was moist and held together well. I have made this carrot cake twice. I cut part of the cake into pieces and froze them and they froze great. The only complaint I have is that it is expensive, I hope as more people are diagnosed with celiac disease or gluten intolerant that the price will go down. I will definetly buy this cake again. Everyone in my gamily loved it, even the ones that don't have Celiac disease.

XO brand is wonderful! I’ve used about every item they sell & have yet to be disappointed. What they do is have the right flour mix for what you’re making. That’s the only thing that makes it not “homemade”. Which is really hogwash bc you’re doing everything you’d do except measuring out flour, etc. After 1x you may find for need to add a spice not listed or more than is listed on box. This product is genius & can’t thank them enough for helping GF eaters have delicious goodies!

It is Gluten free. I must have gluten freeThe taste and texture is very much the same as a pound cake made with gluten Full flour.

I baked the cake as soon the pound cake mix arrived but the mix was expired the cake never raised! Never going to purchase this mixed again! It deserves 0 stars

I ordered this based off of the Amazon reviews. Needed carrot cake. Just have to have it on my birthday. I am gluten intolerant and it has become increasingly difficult to find a dairy free version over the years. Whyyyy?My favorite GF bakery doesn’t even have one which makes my heart sad. Anyway, I came across this one and took a gamble.GREAT! Worried it would be a dry cracker. Wasn’t! Or taste like a sandy, sugary carrot flavored tortilla chip. Yeah, that’s happened. Not this brand . Whoo!And then something interesting happened. A few days later a second box of GF carrot cake showed up from the company, free of charge with a note. Somehow there was a shipping error from the company, and they weren’t exactly sure which customer the error affected. Rather than wait and see (and risk an unhappy customer), the customers who ordered during that window all got double orders to cover themselves, Just in case. I call that good business. I’ll order again. Oh yes!Guess that means I should share now…? Hmm.S

I used the cake mix and made cupcakes with it. Great even without cream cheese icing. I will order more from XO Baking Co.

great gf mix, bakes up well, with a good crumb, but i wish the sugar content was less.

Absolutely delicious. My entire family loved it. I will say though that the cake batter in the package is incredibly small and I found I have leftover crumbs. For the cost, I expected a larger cake so that was disappointing. But the cake was very good tasting. Had it not been as pricey or had there at least been more cake mix I would have given 5 stars.

I love the ease of this product. Having a new celiac diagnosis, i really have not experimented with the GF flour mixes, starches, or powders as I've read some are better in things than in others.This mix is super easy, it's flavourful, moist, and delicious! I made muffins with this mix, making a home made butter cream icing to go with! I sprinkled with extra cinnamon and added a pinch more cinnamon and nutmeg to the mix, as i love those spices.Amazing product! I just bought 2 more boxes :-)

The cake was very delicious and dense! It was my first attempt for gluten free cake mix and I would definitely purchase again.
