They will fit but you may want to verify which pots are currently in it. 250K are great for single coils, 500K are generally used for Humbuckers, and 70's fenders for some reason used 1meg pots. It's all a matter of preference.

You'd need to specify what guitar or application you're planning on using the pot for before the right diagram could be provided. But you can look up exactly what you need on google. Ex. "Wiring diagram for fender tele, strat, les paul, les paul with one volume and one tone.." etc.
