What are the shaft dimensions?

5mm diameter, with two flat sides, making the remaining portion in the center 3mm. Profiled portion of the shaft is 6mm long.

Can you control these stepper motors via ESP8266?

I've never used ESP8266. I believe these are the same motors I have, quite easy to use. Google 5V 28BYJ-48 Arduino Instructables, and check out the links.
