Can this have color added ?

Yes, if you use an oil based color. If you attempt to use a water based color (think dyes used for your Easter eggs) it will seize the chocolate and render it useless for molding or dipping. Wilton sells oil based colors for this purpose.

Can I use this for dipping cherries, and what is the difference between coating and dipping ?

Yes you absolutely can. Merckens chocolate has been used by my candy-making family for generations. I highly recommend it. It is a true high-quality, smooth melting, non gritty chocolate wafer for dipping and molds. It does not need tempering. You can remedy if you need to soften it up as it cools without issue.

One should never freeze chocolate. It gets a coating on it when frozen and loses a bit of its flavour. I make chocolates with this brand and they have never disappointed.
