No. For 1 cup couscous add 1 3/4 cups water, chicken or vegetable stock, bring to a boil then lower the heat to simmer then cook uncovered until the liquid had almost evaporated. I usually lightly brown it in oil before adding the liquid. Once cooked I stir in other cooked flavorings.

Q: Do the packages come with a long enough time before the "use-by"/"sell-by" date? I'd hate to order and have them both dated within just a few months.

no sell-by date. Dried pastas are long lived products. Refer to any box of dried pasta in your pantry, unlikely to see a sell by date. I have one box of whole wheat pasta sith a selll by that is 2 years from today.
