Hard to find pizza flour in retail stores. A must have for better pizza crust, it’s what those famous pizza guys use.

Never Going Back to North American All Purpose Flour
After a trip to Italy, where we learned about the differences between Italian and American flours, I ordered this product and have used it exclusively since for all baking and cooking. It has a smooth, fine texture that is similar to American cake flours. Pizza dough is easier to handle and is stretchier and softer, and it bakes to a superb crispness. Cookies and cakes have a tenderness that all purpose flour cannot deliver. And it seems that the heavier doughiness of some items (homemade soft pretzels, rustic breads, etc.) is gone, such that we can enjoy these things without feeling uncomfortable or distended in the stomach. It's not inexpensive, but it is definitely worth it if you enjoy baking.
