Q: How many millimeters (mm) is the sbh-808dq ball head ?

Are you referring to the QR plate? Or the thread size of the base? Base comes in 3/8 and a 1/4 adapter. The QR mount takes standards and locks up great.

Q: Can the central column move in position from 0 to 180°? That is, aside from vertical position, can the column extend horizontal to the ground?

No it cannot. Strictly vertical movement from the center column.

Q: Is this a good tripod for coyote hunting? Also was wondering if the quick release plate will attach to a gun?

I don't know about hunting using it. I can say it's heavy and solid. I did have mine out in the Utah desert in fine sand and now one of the leg extensions has to be push/pulled in/out. The others still can slide under their own weight. The whole thing can extend higher than you'd use at a normal shoulder height. Quick mount plate is standard camera thread 1/4x20. Overall I'm happy with it.
