Perfect for the occasional meat trim
I wanted to find a pretty affordable boning knife since I won't use it as often as my other knives, however I still wanted it to be sharp and good quality. This thing is almost terrifyingly sharp, easily scoring chicken bones if I'm not careful enough. At least while it has its factory sharpness, trimming off meat requires very, very little force and movement. I personally like the plastic handle, especially the sort of narrow bolster towards the bottom of the blade that perfectly suits my preference to hold a knife with a sort of pinch grip. It probably also contributes to the relatively light weight of the knife, which makes it even easier to handle. Not the most fancy material, but again - for a somewhat niche knife I just wanted something affordable that still got the job done, and this met my expectations.

Not just for food prep
This is one of my favorite weeding tools! (Apologies to those who live in the kitchen; I live in the garden.) It fits comfortably in my hand, dives into the concrete clay of Colorado summers easily and does the work without strain to my wrist. Sharpens well.

Very Sharp for now
Sharp very sharp nice handle it's not for everybody but I like the handle. So sharp I think you should be very careful because you don't want to cut yourself. I don't know why there is a picture of a fish on it but I use it for meat so far so good I hope it doesn't go dull over time like most knives.

The boning knife is a good value.
I bought a boning knife in order to butcher (separate the parts) a chicken. It works very well, and I'm happy that I didn't spend 10x as much as I intended for the Zwilling Pro, although that is still on my list. In the meantime, the Mercer is an excellent substitute and will allow me to practice my boning skills. Out of the box the knife is very sharp and the grip is comfortable and slip resistant. It's an attractive knife, and a good choice to start with if you're learning how to become a more capable home cook, or don't want to spend a lot of money for a boning knife.

Super sharp, made quick work of rabbits
This knige is super sharp. I got it to help with my rabbit processing. It cut the heads off with ease and made the butchering so much easier than the dull knife I was using before. The knife is super cheap for how good it works.

Processing meat is a breeze
If you want victorinox performance without paying the price, this is it. However, this is a stiff knife. I like it so far. Edge retention is good and can easily be sharpened using whetstone. Handle provides good grip. I have processed 20 pounds of beef in one go without any problem.

Good quality knife
Good quality knife. Very comfortable and very sharp. I used this to trim meat (venison & pork). Blade is thick enough and not too flexible. The size is right and functionality worth the money.

Great for Trimming Meat
This is a brilliant knife for trimming meat, I use it for trimming briskets and pork butts. It's cheap, easy to sharpen and keeps a good knife. Enough bend in the knife for trimming, but not too much (semi-rigid).

I wasn't sure if this would make a big difference. It really helps if you are trying to de-bone chicken or other meat.
