Would anyone recommend this product for countertops and around sinks?

No, this is a great product but remains a little flexible. You would want a 2 part Epoxy ( very easy to apply) or a poly based product. System Three has a great epoxy line or get a "bar top epoxy".

Will this over previously stained sealed wood

yes as long as you sand with 220 first

Does this work well on outdoor Acacia wood furniture?

Depending on the wood..but generally I would say if it works on a boat..it should work on wood like a clear coat..

Being an oil-based varnish, I know this product will have an amber cast, but is it slight or moderate in color?

slight but it will darken with age.
