How much whey can collect in the 1gal model before there's so much it starts seeping back into the yogurt?

To be honest I start with 1/2 gallon of milk and get a little less than 2 pints or one quart of whey. The marker on the side shows close to 2.5 quarts of whey can be collected before it touches the bottom of the filter. My best guess is that if you started with a gallon of milk you would end up with slighty less than 2 quarts of whey. It would not touch under that scenario.

Question 2

Can someone give me some ideas on how to use the whey? What recipes would it be good for?

I haven’t used the whey in much cooking. I’ve heard people use it as the liquid in their smoothies instead of milk or juice. I will dilute it with water (1:1 ratio) and feed my plants monthly. They’ve EXPLODED ever since I’ve started doing this.  I’ve also heard there’s some home beauty treatments people use the whey for, like a hair rinse or facial wash.  I also have backyard chickens and will often cook some rice in the whey and feed it to them for extra nutrition.

How long do you have to strain to get greek yogurt?  Do you put it in while warm or cool first, then strain? Thanks

Hello thank you for your question. Times vary depending on how thick you would like to the yogurt to turn out. For best results, we like to cool the yogurt in the fridge first for a few hours, then pour it in the strainer and let it strain for 8 hours or more. I hope that helps.

Question 4

Which size - half or full gallon? I usually make only 1/2 gallon yogurt and don't have a ton of fridge space, but will I regret the small?

if you're only using a 1 /2 gallon of milk then the smaller one should do. The yogurt yield from 1/2 gal of milk will be 1/3 to 1/2 less in volume. The rest will be whey.
