A MUST have for Pastry Fundamentals
A must have book for French pastry making beginners. Easy to understand instructions on how to build and master the fundamentals in pastry making. The whole book and recipes are very well planned out in a logistical order, like building blocks. Lots of beautiful photos and simple and good recipes. So glad that I got this book. Highly recommend

the book seems great at what it does do but it does ONLY cover sweets
my daughter is unable to ingest lactose without serious skin problems, but french baking is all about butter and she adores baking and especially french croissants.. so I figured as I had see croissant recipes to gift her this to try with LF versions.. but sadly the croissant recipes require "old croissants" as an ingredient.The book looks really great at what it does do and it does explain the puff pastry making tho.. we will see how to figure that part out

Looked promising but disappointing and misleading. Author refuses to teach key recipes.
Had to get corrected recipes from the author's blog as book had some errors. Was also disappointed to find that the author's croissant recipes doesn't actually teach you how to make a croissant from scratch but rather how to dress it. "Use 6 day old croissants, cut in halves" is pretty pointless in learning a 101.

Not for Beginners
Some recipes don’t include baking temps or times. It’s a key component to pastries - and “beginners” wouldn’t know this information off the top of their heads.

Lots of great recipes!
From someone who spent a lot of time in France growing up - there are a lot of FANTASTIC recipes here that i CANNOT wait to try out. They have been laid out very well in simple to follow steps - highly recommend!
