Do these have the jaws fit tip? if so does that mess up the screw?

yes it does and no it hasn't messed up one screw on a 43 year old motorcycle. Best tool for Japanese products I've purchased.

Will this fit Phillips #2?

I have used this for all #2 Phillips screws. It does work best on JIS screws.

what is a good size vessel scredriver jis for working on a mountain bike

I'm not sure about mountain bikes however I have purchased the +2x100 and the next smaller size and have found they fit just about everything I've used them on. These have become my most used cross point screwdriver.
