Nce item that does the trick as described - it's taking a bit of trial and error but I am now having a very sharp bread knife It was not obvious how to open these as it seems that to do the handles could break. I thought there was some clever mechanism that needed to be released but in the end just a little brute force effort and they opened with a snap - but did not appear to break. They could be better designed that respect

great value and great for sharpening. the plastic cover needs some time to get to open and not sure if it will stand up to hard use, but time will tell.
