Are the measurement marks on the scraper painted on or etched? Do they eventually come off from being in the disheasher?

They are etched. I’ve never put mine in the dishwasher but the marks are permanent.

Is dough blender medium or large?

It’s approximately the same size as others on the market, it is however, sturdier than most. I have bent a few over the years and this feels like it won’t bend. I haven’t come across medium or large in reference to dough blenders. I’ve been cooking for more than 40 years at home and professionally.

Are they made of stainless ateel?

Yes, they are, except for the red part.
