Safale K-97 Ale Yeast, 11.5g

Hadn't tried this yeast before and it wasn't available from my usual sources so was happy to find on Amazon. Price was decent with the prime shipping. The yeast was terrifically aggressive, in fact the krausen creeped spilled over the top of my loosely covered bucket fermenter. Will probably sparge a little less volume on next effort and add extra water upon bottling. We just tried a sample of the Kolsch like ale last night, and it's very nice. Will try again with slightly more flavoring hops and a bit more carbonation.

I've had good luck with home-brewing using Safale yeasts, both as direct pitch and making a yeast starter. No failed batches or stalled ferments to date.

Per the manufactures specs this yeast packet should be kept at a cool temperature cant remember the exact temp. But they were delivered in a plain old envelope. So I did even want to attempt to use them and ruin a batch of beer.

K-97 yeast as listed.

Works well enough. But I was concerned because I overspent. They send you one large packet, instead of multiple smaller packets. I only brew a gallon at a time (using this for Mead) and the packet is made for a five gallon batch. I was planning on using it five times, but since I only make one batch a month, I most likely won't be able to correctly preserve and measure this to get five uses out of the single packet without messing up my batch.
