Perfect Egg Just Follow Instructions
This pan is perfect for me. It’s small (5”) but works great with one egg. I think it looks very attractive and I appreciate that it is well made and balanced. I followed the directions—preheat on low before adding butter or oil (no cooking spray as it ruins the nonstick finish). I did everything exactly as directed and had perfect nonstick results. It helps that I am an experienced cook. Cooking eggs using any method can be challenging for beginners no matter what the utensil used. My little egg pan was just large enough to cover the flame on my gas stove burner. I used the lowest possible setting throughout. About midway, I covered the pan with a small square of foil to serve as a lid. This helped cook the egg just the way I like it—sunny side up. I used a small silicone spatula to nudge it onto my plate…the directions say to use nonabrasive cooking utensils as hard surfaces can damage the nonstick surface. The pan is not scratch resistant. The photos in negative reviews are a result of high heat, lack of cooking know-how, and not following the instructions. I hand wash my little egg pan and store it in its cute manufacturer’s box to protect it. I expect it to last for years. It has no odor, works as advertised and is a great value for the money. I love my little egg pan! I intend to use it to make myself a burger, mini omelette, bagel sandwich, egg muffin sandwich and more creative ways to make a mini pancake. My only regret is not buying one sooner.

I use it all the time!
This is great when making 1-2 eggs. Because of the small pan, your finished product is thicker instead of running all over. Just make sure you also buy a small spatula. Regular size will not work with it.

GreenPan MINI HEALTHY CERAMIC NONSTICK PERFORMS WELL
Thanks to real fast delivery, I was able to test this ceramic mini fry pan today on an omelette with cooked chicken breast in small cuts. I poured the eggs over an oven-baked potato cut in small pieces and it blended very well. The no-stick pan was easy to wash and the potato did not leave a mess behind either. One thing, I have been using low to medium heat even at the beginning of using any pot. It saves the pot from excessive wear or damage and protects me from getting metals on my food. While the latter can be beneficial in certain quantities and to needed individuals, too much can be bad for one's health. I love this new mini-skillet... it cooks fast at low heat and washes well. I did follow the oiling instructions, though. PS. Now that I have been using this mini skillet for a while and it is still brand new and nothing sticks to it, I can attest to nothing sticking to it; however, I place a round iron separator on the glass stove; turn in medium heat; add a spoon of water and 1/2 of olive oil. When the skillet is hot, I drop the eggs one by one (up to four regular ones) and place a glass lid to check on it. As to my potato omelettes, the same. Not once has anything I cook on it stick. I just poured a brand macaroni mix with one spoon of water and 1/2 of olive oil, stirring with tongs, and it cooked it perfectly. I removed the lid at the end to reduce the sauce it created. Reluctantly, I will have to buy another brand's 8" ceramic aqua skillet to be able to cook larger portions though the 5" can yield a little-large omelette. I checked Amazon and the internet but GreenPan does not have this size in aqua. Great product!

Very good, with a few minor flaws
This is a very nice pan for cooking a single fried egg. The non-stick surface works even better than my other GreenPan frying pan, and my eggs cook very nicely. When its bottom side is done, I can shake the pan and it slides around a bit. I don't even need to use cooking oil. But I have a few quibbles. First of all, the sides of the pan are so steep that it's hard to get my spatula under the fried egg to flip it over. My spatula is very flexible, but not quite flexible enough. Second, GreenPan doesn't make a lid for it, so I need to flip the egg to finish cooking. If I turn the heat up, the bottom will start to burn before the top is ready. A lid would help keep the heat inside. The kicker is that 5-inch lids are very hard to find. And third, it's just a bit smaller than I would like. I like to put my fried egg on a piece of toast from my bread machine, and these fried eggs are much smaller than the slice of bread. All that said, I'm very impressed with the non-stick quality of the surface.

Doesn’t work on induction cooktop.
Ugh. I thought the problem with this pan was that it was too small for my smallest induction burner to use. But after I wrote my first review, I decided to test the pan with a magnet. If the magnet doesn’t stick to the pan, the pan cannot be used with an induction cooktop. The magnet did not stick to the pan. I thought the description said it could be used with an induction cooktop. It cannot.

Great! only one problem
Works great, truly non stick, super easy to clean. Quality made and materials, price is high. It fit's one egg perfect, too perfect. If you like your egg sunny side up it's perfect. But if you want to flip your egg there is no room to get your spatula under and it often folds over instead of a perfect flip. My first 2 eggs were a mess, the third one was fine. Maybe it just takes some practice on my end.
