I got this yeast for a recipe I found for baguettes which called for this specific brand. I had never used it, so I thought I'd give it a try. I was surprised by how it more than doubled on the first rise and overflowed my bread bowl on the second rise. After shaping the baguettes (I made them extra long because I was afraid they would rise into full sized loaves) and letting them rise for the last time, they baked up nice and crusty on the outside and absolutely pillowy inside. I used extra fine bread flour, as always and my kitchen wasn't any warmer than usual, so I can only assume that the excellent rise was due to this yeast.
