Important missing info - what kind of water!?
Just started into building a sourdough starter based on this book a week ago. The instructions are clear and there are great pictures. However, I was surprised to find details missing when it came to the water to use for the starter, since that is such an important ingredient. The book only specifies “unchlorinated” water, so I used our normal house water, which is well water but has been through a water softener and a reverse osmosis system. My starter was disappointing after a week. So, I went to the author’s Breadtopia website for more information, and found that I should not use water that has gone through water softener or an RO system. Really that information should have been in the book. So, I’m starting over again.

Great book for beginners wanting to learn the basics of making sour dough bread. Instructions clear, but more illustrative pictures would have been helpful when it came to shaping and scoring the sourdough bread. Good variety of recipes including recipes for sour dough discard. Helpful troubleshooting tips.
