Q: Is cold pressed and cold extraction the same process?

Hello and thank you for your question, The short answer is yes. To extract oil from olives, the traditional way is to press the olives. That process should not be done with added heat and should be as cold as possible, at a temperature not exceeding 27°C (81°F). We have a higher standard and keep it below 22°C (72°F). However, "press" is a little bit of an obsolete word. Most producers, including us, now use centrifuges instead of presses. The word "press" remained as a substitute for "extraction". Q: Is your olive oil unrefined/unfiltered/cold pressed?

Hello and thank you for your question, Our oil is of the extra virgin grade. That implies unrefined and cold pressed. A "refined" olive oil would not even be "virgin". Cold pressed is also a requirement. We openly publish our laboratory results and our certifications, you are welcome to check that we largely fulfill all requirements.
