Obviously need to match the other ones.** A: It's the steak knife set. **Q: Are the blackwood handles nick and water resistant? Do they require special oils to maintain them? How long have you had your set?** A: We’ve had the set since June of last year. It’s an excellent, profession grade set, but requires very little upkeep. We have had it sharpened once since purchasing it, but otherwise nothing else required. We wash them by hand and dry them before putting them away. The scissors are prone to rust at the pivot between the two blades. I expect that had we always washed them by hand and separated them each night this wouldn’t have happened. The set comes razor sharp out of the box and has a real weight to them, especially on the large blade. Don’t underestimate them, or you will cut yourself. I cannot recommend them strongly enough. My wife is a near professional chef and loves working with them. **Q: Is this a flexible or rigid boning knife?** A: It is flexible. It has a thicker blade, and is certainly less flexible than a filet knife, but it still has some bend to it. I've used mine for a variety of wild game processing and general kitchen needs. I love mine. it came sharp and holds its edge nicely. **Q: What is the difference between this one and the $89.95?** A: I believe that the black wood handle is probably the main difference.
