What is the defrent between this item and the pro one ?

With the Pro version it has preset deflate settings in 5 lbs settings. Makes it easier to dial in the pressure you want. Its fairly accurate I still had to play with mine to get it at the 12 lbs I wanted but they work good. If I had it to do over I think I would get the non pro ones. unless you just want to use their preset settings.

I have a 2500 truck and usually drop my tires to 15-20 psi on the beach but my tires are at 70 psi normally wiLl this damage them at all

These should work fine for what you want to do. But it may take a while for them to drop you from 70psi to 15psi. You may want to look at a valve stem removal tool kit. Much faster. BTW 70psi seems really high!

Does this fit onto air chuck adapters?

It goes on your tire stem and lets the air out to whatever psi you set it to for off roading.
