Ajumma Republic Kimchi Sauce 300 g

This is one of my favourite kimchi sauces. I cut up and pour salt on the Chinese leaf cabbage, I sometimes add chopped up carrots or spring onion greens, I keep draining out the liquid, it’s best left until the leaves have properly wilted so takes a few hours, then I rinse and soak several times to remove the salt,( it’s best to taste it to make sure a lot of the salt is gone) I then I mix in the sauce and put in jars, shake and compress to get out any air pockets and store in the fridge, it’s at its bast after about a week. One bottle covers two medium cabbages.

Tasted closed to Gochujang not Kimchi, very sweet.
