You can look it up on the company's website. You can't always trust everything on Amazon they try to make listings as accurate as possible but it is difficult to edit them. A company's website with detailed spec sheets is the best way to get specific information.

Oh yeah! Get yourself some! We got AP flour that can do it all! I made some dope pizza with this stuff! Domino’s ain’t got nothing on me! Type 00 flour? Who’s she? Bread flour? Who needs that! We got our boy Galaghad (or however you spell it) & he’s up for it all! This flour’s got all the gluten you need! 12% if I remember correctly. Croissants? Done it. Cookies? Not a problem! Tastes immaculate? Came in great condition. Organic? Think so.
