1. Install a PID Temperature control device from Auber Instruments for about $125. Install a 900 w heater for about $50. Install a fan for about $40. 2. Another way is to buy the dust cover for the Bradley. Cut a hole on top so the exhaust smoke can get out. The cover slips off and on with ease when you want to get into the smoker. 3. What I also did was use a 10X20 canvas garage that was shortened to a 10X14 as a wind break for the smoker. I also have a fermentation chamber (temperature and humidity controlled) and cheese cave (temperature and humidity controlled) located in this shelter also.

what is the highest temperature you can reach

I have only wanted to get it up to 350 where I smoked a chicken. Never have needed nor wanted it any hotter. It is a great little smoker. Gives you the ability to choose the amount of smoke you want in your food. You can smoke the whole time or just give a 10 minute smoke.

Does it come with Bisquettes?

Some deals come with the bisquettes, most do not. If you are proactive and shop smartly you can find excellent deals on the bisquettes. You can expect to spend $1.00/hr of actual smoke. I buy the large (120) packs of bisquettes and store them in a dry place. Mesquite, Pecan and Apple are my favorites.
