Is this 2 ten oz bottles or 2 five oz bottles, altogether ten?

I can’t remember, but .....I’m fairky certain that it was 2 ten oz. bottles.

Shelf life? i just got an order from amazon - made in 2013. manufacturer suggests 800 day shelf life. is this once opened or from date made?

I would assume it would be from the date it was bottled. However I wouldn't worry too much about it since it is vinegar. It really doesn't go bad. It does not require refrigeration. Is the seal unbroken in a glass bottle ? You could contact eden foods direct they are very good and could assure you that it is ok to use.

Is this product gluten free?

The ingredients listed on the bottle are: "Hume plum. Beefsteak leaf (shiso), sea salt". The bottle does not specify this is gluten free, but I would say that it definitely has no gluten ingredients. I bought this because of a recipe in "Paleo cooking from elana's pantry", which is a gluten free cook book.

Is this a type of vinegar they would use in sweet and sour soup?

No, this is a Japanese plum vinegar. It's very pungent and delicious! Hot and Soup soup usually calls for rice vinegar or plain white vinegar.
